			<content:encoded><![CDATA[<p>On this episode of Throwdown with Bobby Flay, Bobby goes head to head with Lynn Archer who’s known as the queen of Rockland Maine. Lynn is the owner of <a href="http://www.urbanspoon.com/r/207/1053340/restaurant/Maine/Brass-Compass-Cafe-Rockland" target="_blank">The Brass Compass Café</a> (<a href="http://www.facebook.com/pages/Rockland-ME/The-Brass-Compass/101181341570" target="_blank">Facebook page</a>)which has locals and people from across the country coming for her famous lobster club sandwich among other favorites. Lynns’ most popular dish is her “King of Clubs” lobster club sandwich. This will be the sandwich Bobby’s is going to try to beat.</p>

<p>Bobby recruits some help to choose the bread he’ll be using, the type of ham, lobster, etc. His final recipe for <a href="http://www.foodnetwork.com/recipes/bobby-flay/lobster-club-with-saffron-mayonnaise-crispy-serrano-ham-and-watercress-on-chipotle-brioche-recipe/index.html" target="_blank">“Lobster Club with Saffron Mayonnaise, Crispy Serrano Ham and Watercress on Chipotle Brioche”</a> sounds  good, but can it beat Lynns?. During trial runs on both sides, it’s obvious the taste differences between Bobby and Lynn sandwiches. Bread types, types of bacon/ham, ingredients mixed in the lobster. Both look really good in there own way.</p>
<p>During a live demo that Lynn is giving, Bobby walks up and gives her a big surprise asking her if she wants to have a lobster club throwdown. Lynn looked a little hesitant, but happily accepted the challenge. As Bobby starts cooking she’s asking about the different ingredients he’s using… And then the crowd erupts as Bobby adds celery. Lynn says it’s beautiful but none of that is Maine’esk. Lynn keeps hers simple with a light mayo mix, bacon, lettuce, tomato and double stacked bread. They both finish and taste each others. Bobby gives a head nod like he really enjoys Lynns’. Lynn kind of rolls her eyes after trying Bobby’s and says it’s good, but she really can’t taste the lobster.</p>
<p>The judges are Sam Hayword, chef from<a href="http://www.forestreet.biz/" target="_blank"> Fore Street</a> in Portland Maine, and Anne Mayhle who writes a column in the <a href="http://pressherald.mainetoday.com/" target="_blank">Portland Press Herald</a>. The sandwiches will be judges on taste, bread and first time category; the must have seconds factor.</p>
<p>After the judges try both sandwiches, the win goes to Lynn. The judges said they picked Lynn&#8217;s because it was straight forward and simple… which is what Maine food is about.</p>
